Support for generic OpenAI-compatible transcription endpoints

Hi there! Just received my Pebble and absolutely loving it.

I would love to use my own self-hosted speech transcription endpoints, but I can’t find that option anywhere in the app. Am I missing something?

If that doesn’t yet exist in the app, I can open a GitHub issue to gather the developer’s thoughts on it and start working on it. I’m willing to implement it myself with some feedback from the core devs :slight_smile:

Cool, I’ll start off with an issue so that we can iron out the kinks in my idea and then I’ll go ahead an open a PR :slight_smile:
