Now that Pebble syncs data to HealthConnect you might already be able to do some of these things.
I haven’t done this but on Android you can install the home assistant app, and then settings → companion app → manage sensors → Health Connect sensors.
That lists all the different HealthConnect stats that are collected, and you should be able to sync them over to your home assistant instance.
Not sure how to sync over anything watch-specific like current battery status though.
