I want to play a little bit with PebbleOS. I know I can upload the firmware via bluetooth.
Doing so is there a high risk of totally bricking my new shiny device beyond any chance of reviving it?

Very little risk — the recovery image doesn’t get touched under normal circumstances so worst-case scenario if you make a change that crashes the OS, it’ll reboot a few times and then drop into recovery where you can flash a new version of the firmware.
